BBQ Cauliflower Bites

Ingredients:
- 1 head of cauliflower
- 1 tablespoon of olive oil
- ¾ cup BBQ sauce (or less)
- Salt and pepper to taste
- Soft or hard taco shells (optional)
- Your favorite type of lettuce (optional)
Directions:
- Preheat oven to 450˚F.
- Cut the head of cauliflower in half. Pluck bite-sized florets from each half. Trim bottoms of florets as necessary.
- Line a baking sheet with parchment paper. Spread cauliflower florets on the baking sheet. Drizzle with olive oil.
- Season with salt and pepper.
- Bake for 20 minutes.
- Remove florets from the oven, and toss them with BBQ sauce.
- Return florets to the oven, and bake them for an additional 10 minutes until browned to your liking.
- Brush more BBQ sauce on the cooked cauliflower for extra flavor.
- Serve on a taco shell with some lettuce (optional).
Notes:
These are a delicious and healthy snack to serve for a game day party. Use less BBQ sauce to lighten the sugar content, or try skipping the BBQ sauce altogether! You can also play with using just a little bit of chili powder, or your favorite spice, for a no-sugar-added solution.
