Asian Chicken Lettuce Wraps

Ingredients:

Filling:

  • 1 lb ground chicken
  • 1 Tablespoon liquid, vegetable oil
  • ½ onion, minced
  • 1 cup red or green bell pepper, diced
  • 1 8oz. can water chestnuts, drained and minced

Sauce:

  • 3 Tablespoon low-sodium soy sauce
  • 3 Tablespoon hoisin sauce
  • 1 Tablespoon sesame oil
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon peanut butter
  • 1 Tablespoon honey
  • 2 teaspoon sweet chili sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon powdered ginger
Directions:
  1. Whisk together all of the sauce ingredients until well combined.
  2. Heat 2 Tablespoons of vegetable oil in a frying pan. Once hot, add ground chicken. Cook until some pieces are starting to brown.
  3. Add onion and cook for 5 minutes or until the onion is becoming translucent.
  4. Add the peppers and water chestnuts and cook about 5 minutes or until peppers are becoming soft.
  5. Add in the sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.
  6. Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice!
Notes:

Finely diced chicken breasts are a great substitute for ground chicken!
