Healthy Noodle Bowls

10-Minute Meal Prep

Servings: 5

Ingredients:
  • 9 oz rice noodles
  • 5 tsp (heaped) miso paste
  • 9 oz mushrooms, thinly sliced
  • 2 bulbs of bok choi, base thinly sliced, lengths sliced into strips
  • 1 - 2 oz spring onion, thinly sliced
  • Optional lime
  • 2 ½ chicken/veggie or beef stock cube
  • 13.5 oz water per dish
  • 5 tbsp soy sauce
  • 5 tbsp rice vinegar
Directions:
  1. To five meal prep containers, add a serving of mushrooms, box choi, rice noodles, spring onion, ½ a stock cube and tbsp of miso paste.
  2. Seal the container and place in the fridge.
  3. When you’re ready to eat, empty the contents of the meal prep container into a bowl and add 13.5 oz of boiling water. Add 1 tbsp of soy sauce and pop in the microwave for 2 minutes.
  4. Stir and enjoy!
Notes:

You can add a variety of colorful vegetables like greens, bell peppers, broccoli, green beans, grated carrots, etc. for extra flavor and nutrients.
