Roasted Okra, Tomatoes and Garlic

Servings: 6

Ingredients:
  • ½ lb. okra
  • 1 cup chopped tomatoes
  • ½ cup sliced red onion (optional)
  • 2 garlic cloves, pressed or thinly sliced (optional)
  • 1/2 cup string beans (optional)
  • 1/4 cup fresh mint leaves (optional)
  • 3 tablespoons olive oil (or less if using less vegetables)
  • Salt and pepper to taste
Directions:
  1. Preheat oven to 400 degrees; lightly oil the bottom of the pan, or make sure your vegetables are evenly covered with the olive oil.
  2. Rinse the okra in cold water and drain well on paper towel; trim the tops of okra but don't remove the caps.
  3. Chop the tomatoes (and other vegetables) into large chunks.
  4. Put okra in prepared baking pan, add chopped tomatoes, garlic, sliced onions, green beans and mint.
  5. Drizzle with olive oil season with salt and pepper, stir together.
  6. Roast in oven for 10 to 12 minutes, giving the vegetables a toss while cooking, if needed.
  7. Serve hot, warm or at room temperature, enjoy.
Notes:

This is an easy way to enjoy okra and tomatoes in the summer. Roasting can be done any time of the year! Substitute any other produce you may need to use in the fridge or just enjoy with okra and tomatoes by themselves.
